Oat & Banana Pancake

This oat and banana ‘pancake’ is both filling and nutritious and is my ‘go-to’ at the weekends.

 1 Ripe Banana
 1 Egg
 1 tsp Cinnamon
 ½ cup Oats

Put some coconut oil in a pan and heat on the hob

Mash the banana in a bowl

Add the rest of the ingredients to the bowl and mix

Put the mixture into the heated pan

Heat for roughly 4 minutes on each side (or until golden)

Add some stewed berries or fruit of your choice

Add a piece of mint if you would like

To increase the protein content you can add an additional egg white to the ingredients.
