Vegetable & Feta Fritters

I like to find simple recipes and this one is very adaptable to whatever vegetables you happen to have in the fridge! You can swap the vegetables for almost anything you having lying in your fridge such as beetroot, peppers, squash, parsnip (adapted from Amelia Freer recipe)

Vegetable & Feta Fritters

 100 g Feta
 2 Medium Courgettes
 1 Medium Carrot
 1.50 tsp Ground Coriander
 ½ tsp Sea Salt
 4 tbsp Ground Almonds
 Zest of half a lemon
 Olive Oil

Prepare the ingredients:
Crumble the feta cheese
Grate the courgettes and squeeze to remove excess water
Peel and grate the carrot and then squeeze to remove any excess water.


Mix together all the ingredients, apart from the oil, in a large mixing bowl, until well combined. Then, using wet hands, roughly shape into 8 patties.


Heat some coconut oil in a large heavy-based frying pan, and fry in batches for a few minutes on each side, or until golden.
